In 2006, Adam and I went to India for our honeymoon. We started in New Delhi in northern India where some of my family lives, and made our way by train to Chennai in the South, where my family is originally from. We had a wonderful trip and absolutely loved our time there as newlyweds.
Eggplant, you either love it or hate it. Personally, I’m a lover of eggplant. Its relatively plain taste loves to be dressed up, especially by heavy Indian spices. My Mom’s eggplant curries are a thing of beauty, each bite bursting with flavor and spice, SO delicious.
I’ve always loved Mexican style meals; salty and creamy beans, crisp lettuce, fresh tomatoes, tangy salsa and perfectly ripe avocados. Wrap that up into a burrito, dip a chip into it, throw it into a bowl, in all the ways it can be served the combination is delicious.
The humble tofu. Bland and flavourless on its own, it readily takes on the flavour of whatever you season it with. A delicious crispy exterior is easily achieved with very little oil if you use a non-stick pan.
