When I was pregnant with Lhasa I became intolerant of food in general. It was hard to stomach basically anything and many times for dinner I simply ate a romaine lettuce salad dressed with lemon and olive oil. The mornings were even harder. I found myself feeling tired all the time and struggling to get enough protein in my diet. I created this recipe at that time. I wanted something that was nutrient dense and that I didn’t have to eat too much of to fill me up.
After Lhasa was born (at a whopping 9 lbs 4 oz!) I continued to make this recipe. It’s become a family favorite and a staple in our breakfast repertoire.
This cereal is a dry mix that you store in the fridge. Some days I soak it in almond milk before eating it, some days I eat it warmed up in the microwave and some days I top a little bit of yogurt with it. Saumya is eating it right now as an afternoon snack with cut up bananas in it. It’s versatile, quick, nutritious and tasty, a perfect way to start the day or to fulfill a hunger pang.
- 3 cups oats
- 1 cup oat bran
- ½ cup ground flax
- ½ cup chia seeds
- ⅔ cup unsweetened coconut flakes
- ½ cup pumpkin seeds
- ½ cup chopped walnuts
- ¼ cup raisins
- ¼ cup dried cherries
- Mix all the ingredients in a big mixing bowl.
- To keep fresh, store in a container in the fridge.
