Our fridge died last week, which meant that we were limited in the amount of fruits and vegetables we could keep at home while we waited for our new fridge to arrive. By the end of the week our fruit availability was sad to say the least, a few overripe pears destined for pear sauce and a couple of mealy apples. Everyday about an hour after breakfast my girls are ready for a fruit break and instead of bothering with the mealy apples I went to my frozen fruit instead, smoothie time!
I use smoothies as a way of getting all kinds of nutritious food into my kids, greens in particular. What I found is that if I mixed something green with something blue or red, like spinach and blueberries/strawberries/raspberries, the resulting gray-ish color is a complete turn off for them, regardless of the taste. So when I mix greens into my smoothies I stick to mangoes, bananas, pineapples, peaches, any fruit that won’t drastically alter the color of the greens.
With hemp hearts for protein and medjool dates for sweetness and fiber this vegan smoothie is healthy snack to say the least, but your kids don’t need to know! This smoothie is quite sweet as both the medjool dates and the bananas add a lot of natural sweetness so if you prefer it to be less sweet add less dates and/or omit the banana altogether. Enjoy!
- 1 ½ cups almond milk
- ¼ cup hemp hearts
- 1 cup spinach
- 1 cup frozen mango chunks
- 1 frozen banana (optional)
- 1-3 medjool dates, pitted
- Add all ingredients to a high-speed blender and blend until smooth.
- Makes about 3 cups of smoothie.
-Soak dates in boiling water for 15-30 minutes before blending if not using a high speed blender.
