No summer is complete without the enjoyment of homemade ice cold fudgsicles! I enjoy fruit filled popsicles, but fudgsicles are like chocolate ice cream on a stick. So creamy, with a rich chocolatey flavour, such a delicious refreshing treat on a hot day.
I have memories of my mom making the chocolate fudgsicles from Jello instant chocolate pudding. It was a popular recipe when I was young. They were always fun to make and tasty too. But now knowing about chemicals and ingredients I’d rather avoid in store bought ones, I’ve come up with an easy recipe to make fudgsicles that don’t contain artificial flavours or preservatives, and of course are dairy free too!
Only five ingredients blended together, then poured into your favourite popsicle moulds. Freeze and enjoy. It’s that simple! You can make these without the maple syrup if you prefer a sugar free and less sweet version. Or try a whole ripe banana for natural sweetness. If your kids are used to a sweeter fudgsicle, simply adjust the maple syrup to your liking. I doubled this recipe and made a mint chocolate version with half the blended liquid. Just add mint extract or 1-2 fresh mint leaves before blending. After tasting these, I’ve been thinking fresh raspberries added in would be an awesome addition!
- 1 cup Coconut Milk
- ¼ cup Cacao Powder
- ½ Ripe Banana
- 3 tbsp Maple Syrup
- ½ tsp Vanilla
- For Mint Chocolate Fudgsicles, add ¼-1/2 tsp Mint Extract
- Add everything to a high speed blender and blend until smooth.
- Pour into popsicle moulds and freeze.
- When ready to eat, run mould under water for a minute to loosen the fudgsicle.
